Fat vs. Muscle
Yes it is gross! and yucky to look at. Here is 5 lbs of fat vs. 5 lb of muscle. Same weight but the actual amount looks very different.

I'm glad I weigh that much or I'd be 100 with more fat to fit in the same jeans. I remember this girlfriend in college that wore the same size as i did. She said " I would rather weigh less than you and wear the same size"...ok...that's fine we will just have different body comps and I'll be the lean muscular and you'll be the thin fat. I'll burn more calories sitting than you will moving around... but can we still share clothes lol

when doves cry...da da da da
its no secret that i have sensitive skin and have had issues most of my early teen and adulthood years. when i removed gluten that helped tremendously. DERMATOLOGISTS just treated my symptoms with fungal producing antibiotics and never took the time to really freaking figure it out! I have seen a total of 11 different so called Dermatologists and have tried atleast 9 different medications which never worked and always gave me more symptoms. I tried microdermabrasion, peels and acid Ouch creams, and more... it was my diet (typical american diet) it was always my diet and i had to find the answers on my own. (diet is related to hormone balance and toxins) 13 years on meds on and off for what? no one helped the underlying problems. maybe its not there fault, maybe they didn't get educated on nutrition and diet that goes hand in hand with skin conditions. i felt alone for so long and the fact that doctors charged me $50-$100 to look at my face and grab a pen started to upset me. I would ask them "why do i need meds? isnt there something else?" "bactrim again!?" I would wait 30 minute the lobby and see the doctor for around 10 minutes which was not worth it after years of frustration. what changed?.....DIET and control
i am happy to say i don't have skin issues anymore after 16 years of meds, crying, insecurities, creams, doctors visits with no answers, misdiagnosis, and confusion....i am finally free from that burden. people can say "don't let that bother you", "its not that bad", "people have it worse off" all they want but until you feel comfortable in your own skin then you can move on and be confident. SKIN is important!! it shows your health up front and center, its the first thing you look at in the mirror.
if you have or know someone that has skin disorders, acne, back acne, body acne, scalp issues, discoloration, blotches, dry skin etc. let them know its all ok and there are answers. there are ways to cure and reverse it with a little help and motivation. see a doctor for food allergies, read about candida, milk and other food triggers, read about hormones (since doctors always say it but never explain in detail) read about water, alkaline and vitamins, read about how the biggest organ that we have works and how toxins are directly related...its out there and with my experiences i am a believer that its 1-3 steps away.
I am 31 and just got clear controlled skin 4 months ago. No doctors, No meds, No creams, No shots, No peels. I just improved my diet and removed the bad and cleaned out the ugly. my skin is happy and its healing time for my inner self. hurtful words and covering up scar the heart more than external scars. aaaaahhhh! big breathe :))))) if only we were educated about health at an early age so we can make better decisions and become more aware of our selves.
The one thing I started using last month that seems to really add a glow and clarity to my skin is Dove soap. No residue, its moisturizing and revitalizing, plus its smells good! I am SOOooooo in love with DOVE soap. My grandma loved it and always said "it really works." I thought ok so she loves it but come on grandma its just a soap. My dad said the same "its a really good soap, especially for sensitive skin." I have tried seriously every soap on the market. E-V-E-R-Y one! then i tried Dove and am never going back. you should definitely Try it! what do you have to lose? not but a few $$

went to Costco....
way too many people walking slow and buying too many cookies and breads. felt out of place a bit with all the free samples and mayhem...but oh to not depend on food to make me happy is freedom.
so of course I smelled the fresh bread and watched people take samples of food then smelled the bread again LOL I then bought my produce, went home and ate a peach with a small chicken salad with a tall glass of water.... had energy and was productive. ask yourself why the bread? why the processed? you'll be healthier inside and out plus you save mucho mula $$$
if your going to eat what your going to eat then that is cool just in moderation :)

ageing comes with age. its happens to all of us. some faster than others. genetics do play a role (facial features etc.) but so does your diet.....
you might be too acidic. what do i mean you say? the human body has a normal balanced pH level around 7.4 on the pH scale (pH = power of hydrogen) look at the image below... to maintain ultimate health and age gracefully you have to maintain a balance.
At rest, the normal blood pH of a human being is slightly alkaline, with a pH around 7.4 on the pH scale. Anything above that value is considered alkaline; anything below is described as acidic. Both, in their extremes, are life-threatening for the human body; if the pH value drops below 6.8 or increases above 7.8, the cells of the body cannot function properly anymore and the human will die.
Most Americans are below the balanced pH levels. More acidic foods just sounds bad for you don't they? Foods such as animal foods – meat, eggs, dairy – processed and refined foods, yeast products, fermented foods, grains, artificial-sweeteners, fruit, and sugars are acidifying, as are alcohol, coffee, chocolate, black tea, and sodas. Look at the way we celebrate getting older--hotdogs, hamburgers, pizza, cake and soda. No way to kick off a new year at all :(
So how can I slow down the aging process?
well we get old because we are not disposing of all the internally generated wastes and toxins, and accumulate the leftovers within our body. healthy cells end up living in a toxic environment and are screaming out for help. our biggest organ, the skin starts to show since it is our external billboard of health. cells need to regenerate and thrive but how can they if your body is a toxic landfill. our bodies need an opportunity to release its highly positively-charged toxic heavy metals and other toxic acid waste stored in the cells. Alkaline water and alkaline foods/forming foods will help. (FOODS!!)

I met a 65 year old woman that seriously looked 40...she ate mostly raw foods and only drank water and was active at least 3 times a week. I also then met a nurse at my Obgyn's office. We started talking and had a little in common and she asked "so how old are you?" and I said 30.."WOW, I thought you were 24 or 25" then she said I just turned 30...I thought in my head oh my gosh I totally thought she was 38 or 40. She was not taking care of herself...anywho...
How can I reverse it?!
They say "eat healthy" and "'be on a healthy diet" helps you look younger but by what standard?
A diet filled with grains, breads, meats and veggies (as per the food pyramid) or a diet filled with greens, low sugar fruits, nuts and lean meats in moderation. Well lets see...since the birth of the food pyramid its been downhill for humans and uphill for food companies.
Eat MORE veggies, greens!!! drink more water!!! You need to hydrate you skin and clean out the toxins so your healthy cells can thrive and re-energize!

I took a baby step and almost 1.5 years later I'm happy with the progress. it's hard when you travel but it's getting easier everyday. I'm craving tomatoes and lemons now. baby steps!!!
a whole cherry pie to oreos to ice cream to jello to flavored yogurt to an apple for a snack took about 12 months. what a great change

hawaiian chicken salad (lacto-paleo)

Whole grains or No grains

So what are the pros to eating grains? Do you know? Why do you eat them? They taste good, food is food, it's in everything, it's easy, full of fiber, it's nutritious, it helps with heart disease and helps people lose weight.....really? Why?....I'm curious as well! Let's see here......
If you can get it from grains you can get it from somewhere else!
One slice of whole wheat bread has around 80% less folate and vitamins than lamb or veggies. So what it has fiber right?
Yup whole grain foods have fiber for sure and different grains have different nutrients and properties....but you can get higher fiber content from other sources such as greens (better for you and more nutrient dense, and not processed)
For example:
100g or brown rice = 1.8 grams of dietary fiber
100g of collard greens = 2.8 grams of dietary fiber
Grains are no competion for greens. Is it that we get told we need whole grains? Is that why we eat them? Or is that an excuse? but do we honestly need them?...I don't blame the preachers because they are making $$$$ of the industry of processed foods.
The Paleo diet is a great example to show you don't need grains, and it becomes clear how addicting grains are. Yummy breads, cake, cookies, cereal, pizza and pastas to name a few. It is true that there is an addictive component (that's another article)
10 reasons to quit grains...get the will power and you won't regret
1. You can get everything elsewhere. More of it and better quality
2. Grains aren't good for you gut. Intestinal health is critical (read previous article)
3. Grains cause inflammation. Due to high starch they are an inflammatory food
4. Your probably gluten intolerant to some extent. 30-40% of European descents are intolerant
5. Grains aren't good for your joints. Inflammation + immune cells = attack on soft tissue
6. Grains aren't good for your skin. Elevated insulin leads to hormonal issues
7. Grains are bad for your teeth. Grains contain phytates which is linked to decay
8. Eating grains makes you crave grains. Foods rich in carbs such as grains give you quick energy and rise in insulin levels which starts the vicious cycle.
9. Grains are in foods that are processed. We all know that is no good no matter if it says organic blah blah blah
10. Grains are fairly new on the scene. Think about how long we have been without grains. Hunter gatherer!
But you lose weight! Well of course you will because your eating more fiber silly but at what cost. You could permantely lose weight with veggies and no grains plus feel healthier, not rely on processed junk and look great...Plus your getting way more fiber, vitamins and minerals!

Why do I have a gut...?

Why do some people have a small, medium or large gut then look thin or average everywhere else?? (you don't have to be thin to have a flat healthy stomach, it is not about size its about health) some say:
- that is where i carry fat
- it's genetic
- i'm just bloated
- it runs on my moms side
- stress etc....

The Digestive System
a set of organs that digest the food you eat and absorbs the vital nutrients your body needs to stay healthy, grow and function. Two major parts are the small and large intestines. Just like any other organ you have it can cause problems and diseases that could dramatically affect your life.
in simple terms:
-it extracts nutrients from foods
-turns nutrients into units small enough to be absorbed (vitamins, minerals, and antioxidants)
-eliminates waste
The Immune System
When most people think of their immune system the last thing would be their intestines.
-poor digestion leaves the body and immune system wrecked. when you eat bad your not providing nutrients your body needs, and your digestive system has nothing to absorb and give to your body.
- your using your digestive enzymes to process unhealthy processed, rich, glutenous foods. we only have a limited amount of them and then your left with none which leads to gas, bloating, belching, muscle pain, skin disorders, insomnia, constipation, diarrhea, heartburn and even emotional symptoms.

hungry and don't want to cook GFree

In the past I have tried the Singapore noodles, egg drop soup, garlic spinach, and lettuce wraps. Very good choices and so far I have not seen an Asian menu with so many choices!

Projecto Inflammation be gone-o
I am making an appointment this week to check out my horrible knees and get the ok to start exercising again. My shoulder is good but my knees need some looking at. I have been off my exercise regemine for around 4 months and have worked on my eating habits, intro to juicing, drinking more water, and improving my overall health. I am working on lowering my stress which I feel daily and its little things and big things but move on its good to be alive.

Projecto Inflammation Gone-o
(one of my many experiments since doctors just regurgitate crappy information at times)
reduce intestinal inflammation--step uno or one for those who don't know any spanish :)
Everyone that I know or that I have ever met says "wow I ate so much!" and rubs their belly or they say "man I am fulllll!" and pats their stomach after they eat. Usually after pasta, burgers, pizza, mexican food, or just a simple sandwhich and chips....come on really. I can eat 2 pork chops and 2 cups of brussels sprouts and a full avacado and feel great with no "uuuggghhh i'm so full and look at my belly pop out to prove it"
Ok so the deal is--if your stomach is in your rib cage how are your intestines and lower gut so bloated right after you eat???!!! ever wonder???!!!
My belly picture above consists of: (picture taken around 1pm after lunch)
2 eggs
1 thick pork chop
2 paleo pancakes with tad of organic butter and a drizzle of maple syrup
1 1/2 cups of home made V8 juice
1/2 breast of chicken
1 cup of mixed veggies
2 glasses of water
an apple
handful of almonds
WOW i'm full but not nauseating full and no i did not need to rub my belly......although i'm sure if i ate way less food and only added 2 slices of bread to breakfast and one small slice of pizza for lunch i would look & feel completely different.
If you feel that this is something you want to think of and become more aware of then great because it took me a few years to even start thinking...step one is a perfect step.
Getting rid of inflammation is key to getting heatlhy.... for goodness sakes your immunities are in your intenstines! and when your intestines are bloated and yelling for help how can you expect them to funtion at 110% when your not feeding them what the deserve.
To do this I.....
dramatically lowered my sugar intake from all sugar types and forms of, no dairy, no processed, no caffeine and more alkalizing foods. This seems to be helping whatever damage has been done with too much fruit, sweets, salt, dairy, processed, and whatever else crap I ate for many many years.

Sweet Thang Pot Roast

basic n tasty you say....
2-3 lb chuck roast
1 medium yellow onion chopped chunks
1 large or 2 medium sweet potatoes chunky pieces
2 tbs chopped or grated fresh garlic
1/2 cup of organic beef broth
salt n pepper to taste
2 tbs wheat free tamari (soy sauce) or not
crock pot it for 4-6 hours....or bake covered in foil for up to 2 hours on 325.
eat with a crisp fresh salad and lemon olive oil dressing ;) create a salad with imagination!

4.5 months off...

my body hasn't changed much but I feel out of shape. you are what you eat and I eat pretty darn good ;) anywho..I bet I'm about where I was my second month of crossfit. I'm getting my knee checked out and shoulder then starting back up!! I do miss it but I don't miss the injuries. gotta figure it out.
Eat good, Drink water and live.

no mayo, no bread

1 can of salmon
2 boiled organic free range eggs
1 stalk of celery chopped
small handful of chopped cilantro
3 tbs olive oil
add some tomato and green onion for extra sabor/flavor
pinch of salt n pepper
(add bell pepper too if you like!)
smash an avocado into a spread
spread the avocado spread on a leaf of romaine or butter lettuce. add a few spoonfuls of the salmon salad and throw down your mouth, chew, swallow and enjoy!!!!

CCC Lunch
Chicken Coconut Curry

chicken of your choice
1 can of organic coconut milk
1/2 can of drinking water
3-4 tbs curry powder
1 tbs coconut vinegar
1 onion
2-3 tbs fresh grated ginger
2 tbs sea salt
pinch of fresh cracked pepper
6 hrs in the crockie!
bowl or steam a head of cauliflower. mash up with a fork of straight edged cooking utensil and it'll turn into rice!
put caulirice on plate and a couple spoonfuls of curry on-top and enjoy!!!
